BETHALTO — The former site of Dick and Barb’s now has a brand new face, name and menu with the unveiling of the Laux Brickhouse Grille, opened earlier this month.
“We totally remodeled it from front to back,” says owner Ross Laux of the new restaurant at 212 S. Prairie St.
Despite the extensive remodel, Laux kept the frame of the old Dick and Barb’s bar. He added three bar-high tables that hold eight people each, four big-screen televisions and new chairs. He added a gated, fenced-in back patio with 32 extra seats, covered tables and more.
The additional seating and televisions allow the grill to serve as a sports bar.
“I have a DirecTV packet that allows me to play any NFL football game,” Laux says. “You can watch any game you want.”
The new owner has been a physical education teacher and head basketball coach in Beardstown, Ill., for the past six years. Originally from Bethalto, he says the timing was just right to return to his old stomping grounds and begin a new endeavor.
While keeping with old favorites from the previous establishment such as fish and the horseshoe, Laux expanded the menu, including a revamp of the burger selection with the “build-a-burger” choices.
“You choose your protein or meat, then your cheeses, then your vegetables, and toppings,” he says. “We have a lot to offer when it comes to (all the extras). It’s pretty much endless as far as what you can build.”
Premium toppings include bacon, fried egg, onion rings, guacamole and more.
“I also drive to Alton every Friday morning to buy fresh buffalo for our Friday special,” Laux says. “We (also) offer a variety of options for our salads that are big. Brickhouse-style chicken and waffles, baked goat cheese, marinara dip and fish tacos are just a few of the newly added menu items that are really taking off.”
Laux Brickhouse Grille opens at 11 a.m. and serves dinner until 10 p.m., with closing hours pending. Laux says until the website is up and running, guests can check out the Facebook page at www.facebook.com/lauxbrickhousegrille, where the couple posts specials and events on a regular basis.
